This is 100% red glutinous rice made in Japan
The red pigment in the seed coat is catechol/tannin (a kind of polyphenol).
The taste has a slight sweetness which is light and very easy to eat.
It has a moderate elasticity and chewy texture!
To achieve a light pink colored rice, you will need to mix 20% of white rice with red rice and cook in the rice cooker.
It’s chewy even when it’s cold, and its beautiful color makes it ideal for rice balls and bento.
