Specialty store in Wakayama prefecture, Fukami, has been in business for four generations and has commercialized its products through an integrated approach to ume cultivation, processing, and production.
The ume flakes are made form organic plums grown on the company’s own farm.
The ume is first pickled in salt, matured for three years, and then freeze-dried which is the finished result.
