This is an original blend of 100% ancient rice from Japan.
The black glutinous rice has an anthocyanin pigment (a kind of polyphenol) like the purple pigment in the seed coat.
In red rice and red glutinous rice, the red pigment in the seed coat is a catechol/tannin pigment (a kind of polyphenol). The taste is light and easy to eat, with a slight sweetness.
The green pigment in the seed coat of green rice is chlorophyll.
All three colors are fluffy in texture and the fragrance and taste spread as you chew!
Mix 20% white rice with the black, red, and green grains for an easy pink rice
It’s chewy even when it’s cold, and its beautiful color makes it ideal for rice balls and bento.
